How Buying a Beef Share Works

Buying a share of an animal is different from a trip to the store. Here is the process, start to finish.

  1. 1

    Choose and reserve your share

Pick a quarter, half or whole beef. Place a deposit to reserve it. You'll receive a share agreement that explains ownership of your portion, deposit terms, and what happens if an animal can't be processed.

  2. 2

    You own your share

Utah's custom-exempt rules require that you own your share of the live animal before it is processed. That ownership is what allows you to give processing instructions. It also means the meat is for you and your household.

  3. 3

    Fill out your cut sheet

Tell the processor how to cut and wrap your share: steak thickness, roast size, ground beef or patties, and extras. We help you through the form.

  4. 4

    Processing and aging

Your animal goes to a licensed processor. Beef is typically aged about two to three weeks before it is cut, packaged and frozen. We give you an estimated window when you reserve.

  5. 5

    Final invoice

When the animal's hanging weight and processing charges are known, we send your final invoice. Your deposit is applied to the balance.

  6. 6

    Pickup or delivery

We confirm the date, time and place before your order is ready. Bring coolers or boxes, and have your freezer ready. We serve St. George, Ivins, Santa Clara, Washington and Hurricane.

Important to know. Meat from a share is processed under Utah's custom-exempt rules. It is marked “Not For Sale” and is for you, your household and non-paying guests. It can't be resold or served by a restaurant.

Plan your freezer before pickup day

A half beef needs about 6 to 8 cubic feet of freezer space, and a whole beef about 12 to 16. If your freezer is full, now is the time to clear it out or look at a chest freezer.
